Sourdough Semolina

This sourdough Semolina recipe is delicious because it combines the rich, tangy flavour of sourdough with the texture of semolina flour. Using a breadmaker, like the Morphy Richards bread maker, simplifies the process and ensures consistent results. The result is a crusty, well-risen loaf with a delightful crumb. 

Ingredients: 

  • 150ml water 
  • 125g sourdough starter 
  • 100g strong bread flour 
  • 200g medium semolina 
  • 1 teaspoon salt 

Method: 

Step 1: Put all the ingredients listed above into the bread maker bucket.

Step 2: Set the machine for the Knead/Dough setting. 

Step 3: When the dough is ready, leave it to rise double the size; this may take 2 or 3 hours in warm weather but can be double that if the weather is cold. 

Step 4: If you like, brush the top with melted butter, then set the machine to bake for 1 hour and 10 minutes. Once baking is complete, turn the loaf out onto a rack as soon as possible to cool.
