Easy Tomato and Basil Soup
This super easy and delicious Tomato and Basil soup is an English classic. The flavours of this Tomato Basil Soup are fresh, vibrant and make it the perfect healthy meal to enjoy on a cold winters day. Using our convenient soup maker, you can enjoy this bowl of delicious homemade soup in as little as 21 minutes.
Ingredients:
- 1 tsp Olive Oil
- 160g Onion, peeled, chopped
- 100g Carrot, peeled chopped
- 40g Celery, chopped
- 2 tsp. Thyme, dried
- 580g Vine tomato’s, chopped
- 400g Tinned tomatoes
- 2 tsp. Sugar
- 900ml/31.6floz Water, boiling
- 1 cube Vegetable stock
- Handful chopped Basil
- Pinch Salt
- Pinch Pepper
Preparation:
Step 1: Chop and peel the onion and carrot.
Step 2: Chop the celery
Step 3: Roughly chop the tomatoes and place to one side
Step 4: To make vegetable stock, pour boiling water into a measuring jug to the 900ltr/ 31.6floz
Step 5: Then add the vegetable stock cube and stir until dissolved.
Method:
Step 1: Place the olive oil in the removable vessel, fit the lid, select Sauté and press Start. After 1 minute carefully add the onions, carrot and celery refit the Lid and sauté for 3 minutes, stirring occasionally with a wooden spoon.
Step 2: If you don't have the sauté function on your soup maker, then sauté the ingredients in a pan on your hob.
Step 3: Add the fresh, chopped tomatoes and tinned tomatoes and stir to combine for 1 minutes.
Step 4: Add the sugar, thyme, and vegetable stock and gently stir
Step 5: Put on the lid and select smooth setting and let your soup maker do the rest.
Step 6: When the soup is done lift the lid and season to taste with salt and pepper and sprinkle over basil.
Serving Tip: Why not add a dash of cream for a richer more indulgent soup.
I love my soup maker but I wish the recipes had the amount of calories. I know I can work them out but it would be good to have the “ cooked “ values 😊
It does not even say what size of soupmaker it is for. I am just taking note if what ingredients go in. The exact proportions don’t usually matter. After tasting the first production, I will adjust for taste next time.
As Richard said. Decrease volume of ingredients for the 1.6L capacity or you will be wasting time and ingredients fishing it all out
It didn’t occur to me as I was following the recipe, but when I tried to fill the soup maker with the ingredients, it was far in excess of the 1.6 litres maximum capacity?! With 980g of tomatoes and 900ml of vegetable stock (even without the volume of onion, carrot and celery), there was over 2 litres of ingredients, which given you don’t make a soup maker with a larger capacity than 1.6 litres is bamboozling? Did no one figure this out when you posted the recipe? I ended up having to pour off about 0.5 litres of ingredients so the machine didn’t trip out with the ‘overfilled’ protection. What a waste and maybe you would consider adjusting the recipe to make the resulting volume within the limits of your machines? All that said, the soup was very tasty and a nice consistency 😁👍🏻
