Christmas Butter


This homemade butter truly tastes sensational! The rich, creamy flavour of this butter recipe is enhanced with festive herbs and a touch of clementine zest, making it the ideal addition to your Christmas spread. Making butter means you can spread it on a warm slice of freshly baked bread or pair it with roasted vegetables. This Christmas butter adds a deliciously indulgent twist to any Christmas recipe. Making your own butter allows you to enjoy its unique combination of flavours, making your festive meals even more memorable!

Total Time: 25 minutes
Serves: 10 

Ingredients: 

  • 1 x 250g pack of butter
  • 75g dried cranberries
  • a few sprigs of fresh thyme
  • 4 fresh rosemary sprigs
  • a few sprigs of fresh sage
  • 1 clementine

Method: 

Step 1: Place the butter in a bowl. Finely chop the cranberries and add them to the bowl. 

Step 2: Pick the thyme, rosemary, and sage leaves, then finely chop them by repeatedly running your knife through the herbs until they are very finely minced. Add the chopped herbs to the butter along with a pinch of sea salt and black pepper. 

Step 3: Grate the zest of your clementine and mix it in until the butter softens and all the ingredients are well combined. Then, divide the butter roughly in half. 

Step 4: Take your turkey and use a spoon to carefully separate the skin from the meat. Begin at the side of the cavity just above the leg, then gently work your way up towards the breastbone and along the back to create a large pocket. 

Step 5: Take half of your butter and push it into the cavity you've created. Use your hands to spread it under the skin, working it towards the back to coat the breast meat as evenly as possible. Repeat on the other side, then rub any remaining butter over the outside of the bird to use it all up. 

Step 6: If you have any leftover herb stalks, place them in the turkey cavity to infuse extra flavour as it cooks. 

Step 7: Cover the turkey with clingfilm and place it in the fridge until you're ready to cook it the following day.
