Super Simple Veggie Pot

Are you tired of spending hours in the kitchen, slaving over a hot stove, only to end up with a sink full of dirty dishes? Well, my friend, we have the perfect solution for you: a super simple vegan one pot dinner! Not only is it quick and easy to make, but it's also delicious and nutritious. Plus, you'll only have one pot to clean at the end. It's a win-win situation!

Cooking Times: 30 minutes
Serves: 2

 

Ingredients:

  • 6 plant-based sausages
  • 5 large carrots
  • 2 stalks of white celery
  • 1 leek
  • 2 parsnips
  • 4 potatoes
  • 2L vegetable stock
  • 200g peas
  • A few springs of dried thyme
  • Mustard

Method:

Step 1: Clean the carrots, celery, leek and parsnip and cut them into chunks. Peel and dice your potatoes. Pop this all into a large pot. Add your vegetable stock and cook the ingredients with the thyme for 20-25 minutes.

Step 2: During the last 5 minutes of cooking, add the peas. Then drain the vegetable broth, take out the thyme and lightly mash everything.

Step 3: Prepare the sausages in a pan or in your air fryer. Cut them into pieces and add them to the stew. Season with salt and pepper to taste, and finish with the spring onion and mustard.
