Strawberry & Pimm's Jam

Ingredients

  • 1 ½kg strawberries, hulled and halved if large
  • 1kg bag jam sugar (it has added pectin)
  • juice 2 lemons
  • juice 1 orange
  • 3 tbsp Pimm's No 1

Method

Step 1: Prepare by chilling a selection of saucers in your freezer for later use. Begin by placing fresh strawberries into a preserving pan or your largest saucepan. Gently mash them with a potato masher or crush them slightly between your fingers to release some of their natural juices. 

Step 2: Next, pour the sugar into the pan and set it over very low heat. Stir occasionally until the sugar fully dissolves and the strawberries are covered in a rich, red syrup. Ensure the mixture does not reach boiling point. Once the sugar crystals have disappeared, introduce the refreshing flavours of lemon and orange juice, stirring thoroughly to blend.

Step 3: Next, elevate the temperature to bring the jam to a vigorous, foaming boil (verify with a preserving thermometer, aiming for 105°C). Commence a precise countdown of 10 minutes once at this stage. 

Step 4: Following this, take a teaspoon of the jam and place it onto one of the pre-chilled saucers. Transfer it swiftly into the refrigerator for a minute, then gently press your finger through the jam. If the surface wrinkles satisfactorily, the jam has achieved readiness. If not, continue boiling for an additional 2 minutes and retest accordingly. 

Step 5: Once the jam reaches the ideal consistency, promptly remove it from the heat source. Allow it to cool for approximately 30 minutes, then skim off any surface residue. Introduce the distinctive essence of Pimm’s, stirring it into the mixture. Carefully distribute the jam into sterilised jars. Store in a cool, dark environment for up to one year, ensuring its lasting quality and flavour.
