Spicy Slow Cooked Cheesy Beef Rice | James Brooks Recipes

  • 750g Lean Beef Strips
  • 2tbsp Tomato Puree
  • 1x Green Bell Pepper
  • 1x Red Bell Pepper
  • 1x White Onion
  • 1x Packet Old El Paso Taco Seasoning
  • 1tsp. Salt & Pepper
  • 350g Rice
  • 600ml Beef Stock
  • 100g Grated Cheese


Step 1: Add the Steak, Puree, Seasoning, Peppers and Onion to your Slow Cooker - mix it nicely with a wooden spoon

Step 2: Lid on, then cook on Low for 6-8 hours or High for 3-4 hours

Step 3: 45 mins before dinner: Wash the rice, add it to the Slow Cooker alongside the Beef Stock, stir and cook on High for 45 mins.

Step 4: Once finished, add the cheese and cover with a lid until the cheese is melty.

Step 5: Serve and enjoy!

    Made this today. It’s wonderful, really tasty and quite filling.
    Only 2 of us so I have 2 portions in the freezer.
