Spiced Cranberry Jam

This festive season, make something extra-special for your loved ones with this delicious spiced cranberry jam recipe.

Makes: 650ml jar or x3 228ml jars

Ingredients:

  • 500g fresh cranberries
  • 2 oranges zested and juiced 
  • star anise
  • cinnamon stick
  • cloves
  • 500g caster sugar
  • 2 tsp edible glitter for a added sparkle (optional)

Method:

Step 1: First, place a small plate in the fridge to chill. Now, gather cranberries, orange zest, orange juice, star anise, a cinnamon stick, cloves, and sugar in a heavy-based saucepan. Let it come to a gentle boil. Reduce the heat and simmer for about 30 to 35 minutes, stirring frequently, until the cranberries burst and the liquid thickens into a jammy consistency.

Step 2: To check if it's ready, drop a spoonful of the jam on the chilled plate and let it cool. Once cooled, run your finger through it - if it wrinkles up, it's ready! If not, simmer for an additional 5 minutes and test again.

Step 3: After 10 minutes, remove the whole spices, and if you'd like, add some glitter for a magical touch. Transfer the jam into sterilised jars, seal them, and let them keep in a cool, dark place for three delightful months. Once opened, it'll stay fresh in the fridge for about one month. Enjoy your homemade jam!
