Slow Cooker Turkey & Cranberry Stew

Ingredients: 

  • Leftover turkey (shredded)
  • Leftover vegetables (carrots, parsnips, Brussels sprouts, etc.)
  • 1 cup leftover gravy
  • 1 cup leftover cranberry sauce
  • 1 can of chopped tomatoes
  • 1 onion (diced)
  • 2 garlic cloves (minced)
  • 1-2 cups chicken or turkey stock (adjust based on desired consistency)
  • Salt and pepper to taste
  • Fresh thyme or rosemary (optional)

Method: 

Step 1: In your slow cooker, add the shredded leftover turkey, leftover vegetables, and diced onion. Stir in the garlic, chopped tomatoes, leftover gravy, and cranberry sauce.

Step 2: Pour in the chicken or turkey stock, then season with salt and pepper to taste. Stir everything together until well combined.

Step 3: Set the slow cooker on low for 4-6 hours or on high for 2-3 hours, until everything is heated through and the flavours have melded together.
