Slow Cooker Clotted Cream Fudge

Cook time: 5 hrs
Makes: 16 squares

Ingredients:

  • 300g golden caster sugar
  • 100g golden syrup 
  • 200g clotted cream
  • 2 tsp vanilla extract
  • vegetable oil, for greasing the tin 

Method:

Step 1: Simply mix caster sugar, golden syrup, clotted cream, vanilla, and sea salt in the slow cooker and cook until it becomes a beautiful caramel colour. If your slow cooker allows, cook uncovered to speed up the process.

Step 2: Once cooked, transfer the mixture to a baking tin lined with parchment paper. Stir vigorously to cool the fudge and break up any sugar crystals. As it cools, the fudge will thicken and take on a matte appearance. Smooth the mixture in the tin, sprinkle with salt, and chill for about an hour until set.

Step 3: After it has set, cut the fudge into chunks. It can be stored in an airtight container for up to five days. Enjoy!
