Slow Cooker Christmas Leftover Shepherd's Pie

Ingredients:
- Leftover roast turkey (shredded)
- Leftover vegetables (carrots, peas, Brussels sprouts, etc.)
- 1 cup leftover gravy
- 1 cup leftover mashed potatoes
- 1 small onion (diced)
- 2 garlic cloves (minced)
- 1/2 cup frozen peas
- 1 cup chicken or turkey stock
- 1 tsp dried thyme (optional)
- Salt and pepper to taste
Method:
Step 1: In the slow cooker, combine the shredded leftover turkey, leftover vegetables, diced onion, and garlic. Add the frozen peas, gravy, and chicken or turkey stock. Stir everything together and season with salt, pepper, and thyme.
Step 2: Set the slow cooker on low for 3-4 hours, allowing all the flavours to blend together and the filling to heat through.
Step 3: Once the filling is ready, spread the leftover mashed potatoes evenly over the top of the turkey and vegetable mixture in the slow cooker. Use a spoon to smooth the potatoes out, making sure to cover the filling completely.
Step 4: Cover and cook on low for another 30-45 minutes, until the mashed potato topping is heated through and slightly golden on top.
Serve5: Once done, serve your hearty Boxing Day shepherd’s pie with a side of cranberry sauce or gravy.
