Broccoli and Stilton soup is a British classic. The seasonal, thick and wholesome soup recipe is the perfect winter warmer to enjoy this cold January. Using our convenient soup maker, you can enjoy a bowl of delicious homemade soup in as little as 21 minutes.Prep time: 5 Minutes
Cook time: 30 Minutes
- 1 onion, finely chopped
- 1 celery stick, sliced
- 1 leek, sliced
- 1 medium potato, diced
- 750ml low salt or homemade chicken or vegetable stock
- 1 head broccoli, roughly chopped
- 140g stilton or other blue cheese, crumbled
Step 1: Put all the ingredients into the soup maker, except the stilton, and press the ‘smooth’ function. Make sure you don’t fill the soup maker above the max fill line.
Step 2: Once complete, make sure to season to taste and stir in most of the stilton. Briefly blend once more until the cheese has melted into the soup. Season with a little more black pepper and top with the remaining cheese to serve.
