Chocolate Pear Pudding

Ingredients:

  • 200g butter, plus extra for greasing 
  • 300g golden caster sugar
  • large eggs
  • 75g plain flour
  • 50g cocoa powder 
  • 410g can pear halves in juice, drained 
  • 100g plain dark chocolate (70% cocoa solids)
  • Cream or ice cream, to serve 

Method:

Step 1: Preheat your oven to 190C/170C fan/gas 5. Grease a shallow ovenproof dish that's about 20 x 30cm in size. In a large saucepan, melt some butter over low heat and mix in the sugar until well combined.

Step 2: In a separate large bowl, whisk the eggs together. Gradually add the eggs to the butter and sugar mixture, beating well with a wooden spoon after each addition. Sift the flour and cocoa powder on top of the egg mixture, then vigorously stir until everything is well mixed.

Step 3: Pour the batter into the prepared dish and gently press the pears into the chocolate batter. Take a chocolate bar and cut it into chunky pieces of roughly 1.5cm with a large knife. Sprinkle the chocolate pieces over the batter. You can freeze the cake at this point if you like.

Step 4: Place the dish in the centre of the oven and bake for around 30 minutes. The cake should be crusty on the surface and lightly cooked inside. Be careful not to overcook it, as it may become spongy rather than gooey in the centre. Serve the cake warm with cream or ice cream for a decadent treat!
