Chocolate Chip Cookies

Ingredients 

  • 120g butter, softened
  • 75g light brown sugar
  • 75g golden caster sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 180g plain flour
  • ½ tsp bicarbonate of soda
  • 150g dark chocolate, cut into chunks
  • ¼ tsp salt

Method

Step 1: Preheat the oven to 180C/160C fan / gas 4 and prepare two baking trays with parchment paper. 

Step 2: Mix together the butter and sugar, once it becomes very light and fluffy, beat in the egg and vanilla. Once all combined, stir in the bicarbonate of soda, flour, chocolate and a ¼ tsp of salt. 

Step 3: Next, scoop 10 large tbsp of the mixture and place onto the prepared baking trays. Remember to leave enough space between them. 

Step 4: Bake until firm at the edges but still soft in the middle. This usually takes between 10-12 minutes. Once cooked, transfer to a cooling rack and leave to cool for a few minutes. 

These cookies will keep for 3 days when stored in an airtight container.
