Cheese Scones

Ingredients:
- 225g self-raising flour, plus extra for dusting
- pinch of salt
- pinch of cayenne pepper
- 1 tsp baking powder
- 55g chilled butter, cut into cubes
- 120g mature cheddar, grated
- 90-100ml milk, plus 1 tbsp for glazing
Method:
Step 1: Preheat the oven to 200C/ 180C/ gas 6 and place a large baking tray inside. Next, sift the flour, salt, baking powder and cayenne pepper into a bowl, then to make sure the ingredients are fully combined, sift again.
Step 2: Next, add the butter to the bowl and combine with the mixture using your fingertips to make breadcrumbs. Following this, scatter 100g of the cheese into the breadcrumb mixture and continue to rub together until it is evenly distributed. Remember, the heat from your hands could melt the butter so try not to mix too much!
Step 3: Once the mixture resembles breadcrumbs, make a well in the middle of the mixture and pour in the milk and mix until the dough is soft but firm. A good approach is to pour the milk in stages so that you can monitor the consistency of the dough.
Step 4: Next, lightly flour a work surface and begin to roll out the dough until it is approximately 2cm thick. Using a medium sized cutter (about 8cm), cut out the scones and place onto a sheet of baking parchment paper, glaze with milk and sprinkle the remaining cheese on the top. Carefully slide onto the tray that has been warming up inside the oven and bake for 15-20 minutes.
