Brioche French Toast

As we celebrate Brunch Month, there's no better time to elevate your brunch game than with this exquisite recipe. Get ready to delight your taste buds with this timeless classic from BBC Good Food, because every brunch deserves a spot of elegance and touch of indulgence!

Preparation Time: 5 minutes 

Cooking Time: 15 minutes 

Serves: 4 people


  • 2 large eggs
  • 80ml whole milk
  • 40ml double cream
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 4 thick slices brioche
  • 2 tbsp vegetable oil
  • 2 tbsp butter
  • To serve, icing sugar and fresh berries 


Step 1: Whisk together the milk, cream, eggs, vanilla and cinnamon. Place the brioche slices on a shallow dish and pour the mixture over the top. Allow them to soak for 2-3 minutes, then carefully turn over and allow to soak for a couple more minutes. 

Step 2: Over a medium heat, warm up 1tbsp of vegetable oil and butter in a non-stick frying pan until it starts to foam. Carefully place 2 slices of the brioche into the frying pan and fry for 3 minutes on each side or until golden and crispy. Then, pop onto a wire cooling rack over a baking tray and keep warm in the oven while you repeat the process with the remaining slices of brioche. 

Step 3: Dust the icing sugar over the top of the french toast and top with fresh berries!
