Autumnal Squash & Stilton Soup

Chilly autumn nights call for warm comfort food like this cosy squash and stilton soup recipe!

  • 1/2 a Winter squash, cubed

  • 2 cloves of garlic, sliced

  • 1/2 a large onion, diced

  • 1 small carrot, diced

  • 80g of stilton cheese

  • 1 salad tomato

  • ~700ml of vegetable stock

  • Olive oil

  • Salt

  • Pepper

  • Parsley for garnish


  • In a frying pan gently sauté your garlic, onion, and carrot in a little olive oil, season to taste with salt
  • Once softened, add the veg from the pan into the Morphy Richards Soup Maker along with your squash, stilton, tomato, and parsley stalks
  • Fill up to between the “min” and “max” lines with vegetable stock, approx 700ml
  • Set the mode to “smooth” and start
  • After 21 minutes, your soup should be ready and blended
  • Serve in a bowl with a drizzle of olive oil, chopped parsley, and a crack of black pepper
  • Enjoy!
