Air Fryer Fish & Chips

Total time: 20 mins
Serves: 4

Ingredients:

  • The whites of 2 large egg
  • 2 packs salt and vinegar potato crisps, crushed
  • 4 cod fillets,
  • 1 tbsp olive oil, plus more for spraying
  • 450g frozen peas, thawed
  • 1 tsp grated lemon zest plus 2 tbsp of juice
  • Salt and pepper to season

Method:

Step 1: Start by preheating your air fryer to a toasty 200°C. In a shallow bowl, whisk together fluffy egg whites and a tablespoon of water.

Step 2: Next, grab another shallow bowl and fill it with some crushed crisps. Dip your fresh fish into the egg whites, letting any excess drip off, and then coat it with the crisps. Gently press down to make sure they stick!

Step 3: Spray some olive oil on the air fryer basket, arrange the coated fish inside, and cook until golden brown. Plus, make sure the fish is opaque throughout. It usually takes around 10 minutes.

Step 4: Meanwhile, grab a bowl and microwave some peas couple of minutes. Once done, toss them with some refreshing lemon zest and juice, a touch of oil, and a sprinkling of salt and pepper. Mashing them will add a creamy touch. Serve this irresistible side dish alongside your crispy fish.
