Ultimate Christmas Roast Potatoes
Nothing screams Christmas dinner quite like a perfectly crispy and fluffy roast potato. The ultimate sideshow to your succulent main course, roast potatoes are essential to the festive feast.

Serves: 4
Ingredients:
- 1Kg of Albert Bartlett Potatoes
- 100g of goose or duck fat, alternatively 100ml of olive oil
- 2 tsp of flour
- Salt & Pepper
Method:
Step 1: Put the roasting tin into the oven and heat to 200c
Step 2: Peel the potatoes & cut them evenly into 4 slices per potato
Step 3: Add the potatoes into a large pan and cover in water
Step 4: Add a pinch of salt & allow the water to boil. Once the water has reached boiling point, lower the heat & start a timer for 2 minutes.
Step 5: While your potatoes are cooking add the fat or the oil into the hot roasting tin & heat in the oven. Take caution when doing this.
Step 6: Drain the water from the potatoes and shake them a few times to allow them to be fluffy on the outside.
Step 7: Add the flour to the potatoes and give them a good shake.
Step 8: Put the potatoes onto to hot pain & turn them so they are fully coated. Please take caution when doing this.
Step 9: Put them in the oven for 15 minutes & remove and shake.
Step 10: Roast for another 15 minutes & shake them again. Put them back into the oven for a further 10 minutes. Alternatively keeps them in the oven until they are a colour of your liking.
Step 11: Sprinkle some salt & serve.
