Summer Pea, Kale and Feta Soup
When it comes to boosting your iron intake in a delicious, easy way, this soup ticks all the boxes. Packed with nutrient-rich kale and peas, and finished with salty crumbled feta, it’s vibrant both in colour and in flavour.

The fresh mint lifts the flavour, while the feta adds richness and contrast. A scattering of nigella seeds and a drizzle of olive oil bring everything together with a lovely final flourish.
Ingredients:
- 1 white onion, quartered
- 500g kale, stalks removed
- 2 medium potatoes, peeled and cubed
- 1 garlic clove
- 2 sprigs fresh mint
- 150g frozen peas
- 1 pint vegetable stock
- 50g feta cheese
- Salt and pepper
To serve:
- 1 tbsp nigella seeds
- 50g extra feta, crumbled
- Extra virgin olive oil
