Slow Cooked Quinoa Chilli

Looking for a hearty and healthy dish that’s perfect for chilly evenings? Look no further than this slow cooked quinoa chilli recipe. It combines the richness of traditional chilli with the nutrition of quinoa, making for a dish that’s both delicious and good for you.

Cooking Time: 4-5 hours

Serves: 4 people


  • 1 Red Onion diced
  • Can of Sweet Corn drained
  • Can of Red Kidney Beans rinsed and drained
  • Can of Black Beans rinsed and drained
  • 190g Uncooked Quinoa rinsed
  • 1 TBSP Garlic Puree
  • 1/2 bunch fresh Coriander stems and leaves finely chopped
  • 2 TBSP Ancho Chilli Powder
  • 2 Tsp Ground Cumin
  • 1 Tsp Cayenne Pepper
  • 1 Can Chopped Tomatoes
  • 1 Tube Tomato Puree
  • 650ml Veggie Stock
  • Avocado sliced
  • Handful of grated Vegan Cheese


  • Add all the ingredients other than the avocado, coriander (leaves) and vegan cheese to the slow cooker
  • Set to High and cook for 4-5 hours
  • Serve in a bowl and top with the avocado, a sprinkle of chopped coriander and some vegan cheese
  • Enjoy
