Gluten-Free Christmas Cookies

Cook time: 10-30 minutes 
Makes: 20 

Ingredients:

  • 125g unsalted butter
  • 125g caster sugar
  • ½ unwaxed lemon, zest only
  • 1 free-range egg, lightly beaten
  • 1 tsp vanilla extract
  • 200g gluten-free plain flour, plus extra for rolling
  • 40g ground almonds
  • ½ tsp xanthan gum
  • pinch salt
  • icing sugar, for dusting 

Method: 

Step 1: In a bowl, cream the softened butter and caster sugar until light and pale, then mix in the lemon zest. 

Step 2: Use a spatula to scrape down the bowl, then add the beaten egg and vanilla, mixing until fully combined. 

Step 3: Mix in the gluten-free flour, ground almonds, xanthan gum, and salt until smooth. Shape the dough into a ball, flatten into a disc, wrap in cling film, and chill for 1 hour. 

Step 4: Line two baking trays with baking paper and dust the work surface with gluten-free flour. 

Step 5: Roll the dough to 2–3mm thick and cut out shapes using the largest cutter. 

Step 6: Place the cookies on the baking trays, then use a smaller cutter to stamp out stars from each centre. Re-roll any dough scraps to cut more shapes. 

Step 7: Chill the biscuits for 30 minutes while preheating the oven to 170°C. 

Step 8: Bake on the middle shelf for 10 minutes, until edges are lightly golden. Cool on the tray for 2–3 minutes, then transfer to a wire rack. 

Step 9: Dust with icing sugar to serve.
