Chocolate Chip Cupcakes

If you’re looking for an easy baking recipe, these chocolate chip cupcakes are a perfect choice, they taste delicious and are super quick and easy to bake when using the Morphy Richards 5.5L Grey Stand Mixer. This muffin recipe fills your kitchen up with the sweet aroma of chocolate, giving you a blend of moist texture and perfect sweetness in every bite. 

Ingredients:

  • 100g unsalted butter

  • 100g caster sugar

  • 2 large eggs

  • 100g self raising flour 

  • 100g chocolate chips 

  • ½ tbs vanilla extract 

  • Icing sugar, for topping 

Method: 

Step 1: Start by preheating your oven to 190C/375F/Gas mark 5. Using the Morphy Richards Muffin Tin, place your cupcake cases into eight of the cups. 

Step 2: Using the Morphy Richards Stand Mixer, designed with an integrated scale allowing you to precisely measure the ingredients directly in the bowl. Add the butter and caster sugar into the bowl and whisk until it is light and creamy. For the best baking results we recommend you use the speed controls between 1 to 5. 

Step 3: Using setting 1, on the stand mixer, carefully whisk the eggs into the mixture. Now your eggs are fully whisked, add in the vanilla extract. 

Step 4: Take your flour and sift it into the mixture until all the flour is combined. Now add your chocolate chips and mix until they are fully combined. 

Step 5: Take your muffin tray and spoon the mixture into each case until they are ¾ full. Put them into the oven for 15 to 20 minutes. Once they’re done, place them onto a rack to cool down. 

Step 6: Sprinkle with icing sugar and enjoy!
