Cheeseboard Mac & Cheese

Serves: 4
Ingredients:
- 350g of your chosen pasta
- 2 tbsp butter
- 1 garlic clove, crushed
- 1 tsp mustard powder
- ½ tsp cayenne pepper (optional)
- 3 tbsp plain flour
- 500ml milk
- 250g mix of cheeses you have left over, plus a little extra cheddar or parmesan for the topping
Method:
Step 1: Start by cooking your pasta according to the instructions, then drain and set aside.
Step 2: In a saucepan, melt the butter and then add the garlic and cook for a minute until softened. Now add the mustard powder and cayenne pepper and cook for further minute.
Step 3: Add the flour to the pan and stir to make a paste, cooking for about 1 minute, or until the mix starts to bubble a little. Remove from the heat and then gradually pour in the milk, whisking with every addition to avoid the sauce getting lumpy. Return to the heat and cook for 5 minutes until thickened, before adding your cheeses and stirring until melted. Finally fold in your cooked pasta.
Step 4: Now heat your oven to 180C/160C fan/gas 4. Tip the pasta mix into a baking dish, and top with extra grated cheese, we like to use cheddar or parmesan (or even a mix of both!).
Step 5: Bake for around 25-30 minutes or until golden and bubbling. Allow to cool for 10 minutes before serving.
