Vegan Tacos
These vegan tacos are a fantastic meal, offering a delicious and satisfying twist on a classic taco recipe. Packed with fresh, flavourful ingredients, this vegan recipe delivers a perfect balance of textures and spices. They're easy to make and full of nutrients, making them a go-to for tasty and wholesome vegan meals.

Ingredients:
- 1 tbsp vegetable oil
- ½ red onion
- 1 large sweet potato, peeled and cut into 1cm cubes
- 2 red pepper
- 400g tin black beans, rinsed and drained
- 2 tsp ground cumin
- 1 tsp garlic granules
- 1 tbsp chipotle paste
- 8-10 small corn tortillas
- 1 avocado
- dairy-free yogurt, to serve
Salsa
- 2 tomatoes
- ½ red onion
- 1 lime, juiced, plus wedges to serve
- a small bunch coriander, ½ finely chopped, plus leaves to serve
Pickled Onions
- 1 small red onion
- 4 tbsp cider vinegar
- 2 tbsp caster sugar
Method:
Step 1: Place the pickled onion ingredients in a jar or bowl, add 2 tbsp of boiling water and a pinch of salt. Let them pickle, soaking up all the tangy goodness, while you prepare the tacos.
Step 2: Heat the oil in a large frying pan and sauté the onion for 10 minutes until it turns soft and fragrant. Add the sweet potato and pepper, frying for another 5-10 minutes until they start to caramelise. Stir in the black beans, cumin, and garlic granules, allowing the spices to toast for a few minutes. Then, mix in the chipotle, 100ml of boiling water, and a generous amount of seasoning. Let everything simmer for 10 minutes, until the vegetables are tender and the rich, smoky sauce perfectly coats the veg and beans.
Step 3: Combine the salsa ingredients in a bowl, adding a pinch of seasoning, and mix until everything is fresh, vibrant, and bursting with flavour.
Step 4: Pop your tortillas into the air fryer for 2 minutes, until they’re perfectly warm and deliciously toasty.
Step 5: Serve the toasty warm tortillas with the tender veg and beans, tangy pickled onions, fresh salsa, creamy avocado, and a dollop of yogurt on the side. Let everyone dive in and create their own delicious tacos.
