Ultimate Leftover Turkey Sandwich
Wanting to use your leftover turkey? This turkey sandwich is bursting with different festive flavours, making your leftovers into a delicious treat. From turkey and gravy to cheese and cranberry sauce, anything from your fridge comes together nicely in this Christmas sandwich. It is super easy to make, it is the best way to enjoy your Christmas leftovers!
Ingredients:

2 slices of thick bread
For The Pickle

6 tbsp white wine vinegar

1 teaspoon wholegrain mustard

2 carrots
-
1 big tomato
-
¼ of a cauliflower
-
8 radishes
-
½ a fresh red chilli
-
1 x 100g jar of green pitted olives

1 x 465g jar of roasted peppers
For The Filling

400g sliced leftover turkey
-
6 tablespoons leftover gravy
-
6 tablespoons mayonnaise
-
250g sliced leftover ham
-
60g bag of rocket
-
200g Cheddar
Method:
Step 1: Pull the turkey apart until it is shredded. Using a Morphy Richards Frying Pan, turn the heat up high, add the turkey to the pan and fry so it becomes crispy. Spoon over 3 tablespoons of the leftover gravy and stir.
Step 2: To make the pickle, using the Morphy Richards Whisk, whisk together the olive oil, white wine vinegar and mustard together. Slice the vegetables, chilli, roasted peppers and olives. Add it all to a bowl and mix well.
Step 3: Add the rest of the gravy with mayo. Take your bread and spread the gravy mayo over both slices. Take the turkey, ham, stuffing, tomato, rocket, pickles and cheese. Then, put the other slice of bread on top and cut it in half and enjoy!
