Spicy Chicken & Avocado Wraps
This is such a quick and simple avocado recipe. The spicy chicken provides a zesty kick with a creamy avocado. Every time you take a bite you receive a satisfying combination of spicy heat and creamy smoothness, making these wraps a delight to eat.
Preparation time: 5 minutes
Cook time: 8 minutes
Serves: 2
Ingredients:
- 1 chicken breast180g
- squeeze juice 0.5 lime
- ½ tsp mild chilli powder
- 1 garlic clove
- 1 tsp olive oil
- 2 seeded wraps
- 1 avocado
- 1 roasted red pepper
- a couple of sprigs coriander
Method:
Step 1: Combine the chicken with lime juice, chili powder, and garlic.
Step 2: Heat oil in a non-stick frying pan and cook the chicken for a few minutes until done, watching it closely as it cooks fast. While the chicken cooks, warm the wraps according to package instructions or, if using a gas hob, heat them over the flame until slightly charred. Ensure they stay moist to make rolling easier.
Step 3: Spread half of an avocado onto each wrap. Warm the peppers in the pan until heated through, then place them on top of the wraps along with the chicken. Sprinkle fresh coriander over the fillings. Roll up the wraps, cut them in half, and enjoy eating them with your hands.
