Soup Maker Pumpkin Soup

Ingredients: 

  • 1.2 kg pumpkin or butternut squash, unpeeled weight
  • 1 onion , sliced
  • 2 garlic cloves , peeled whole
  • 750 ml vegetable or chicken broth/stock
  • 250 ml water
  • Salt and pepper
  • 125 - 180 ml cream 

Method: 

Step 1: Cut the pumpkin into 3cm slices. (Cut the skin off and scrape seeds out). 

Step 2: Place the pumpkin, onion, garlic, broth and water in the soup maker, set
to smooth and press start. 

Step 3: Season to taste with salt and pepper, stir through cream. 

Step 4: Ladle soup into bowls, drizzle over a bit of cream, sprinkle with pepper and
parsley if desired. Serve with crusty bread.
