Nut Roast

If you are looking for a vegetarian or vegan Christmas recipe, this nut roast is the one for you. It is the perfect centerpiece for a vegetarian christmas dinner or vegan christmas dinner as it will pair beautifully with your festive vegetables. This christmas dinner recipe is delicious and will go down a treat at the table whether or not you follow a vegetarian or vegan diet. 

Ingredients: 

  • 1 tbsp olive oil 

  • 15g butter 

  • 1 large onion, finely chopped 

  • 2 sticks celery, finely chopped 

  • 2 garlic cloves, finely chopped 

  • 200g chestnut mushrooms, finely chopped 

  • 1 red pepper, finely diced 

  • 1 large carrot, grated 

  • 1 tsp dried oregano 

  • 1tsp smoked paprika 

  • 100g red lentils 

  • 2 tbsp tomato puree 

  • 300ml vegetable stock 

  • 100g fresh breadcrumbs 

  • 150g mixed nuts 

  • 3 large eggs, lightly beaten 

  • 100g mature cheddar, grated 

  • Handful of parsley, finely chopped 

For the tomato sauce

  • 2 tbsp olive oil 

  • 2 garlic cloves, finely sliced 

  • 1 sprig rosemary 

  • 400ml passata 

Method: 

Step 1: Using the Morphy Richards Loaf Tin, line with parchment paper. 

Step 2: Using the Morphy Richards Frying Pan, heat the pan and add the butter, olive oil, onion and celery sticks for 5 minutes. Then, add in the garlic, mushrooms and cook for 10 minutes. 

Step 3: Add the carrot and red pepper for 3 minutes then add the smoked paprika and oregano and cook for a further minute. 

Step 4: Put the lentils, tomato puree into the pan and cook for a minute and then add the vegetable stock and simmer over a low heat until the mixture is dry, this will take about 25 minutes. Set aside to cool down and preheat the oven to 180C/ fan 160C/ gas 4. 

Step 5: Once the mixture is fairly dry, add in the breadcrumbs, eggs, mixed nuts, cheese and a handful of parsley with a sprinkle of salt and black pepper and stir until well combined. 

Step 6: Spoon the mixture into the loaf tin and press down the top so the surface is evenly flat. 

Step 7: Cover the tin with foil and bake for 30 minutes. Then, remove the foil and bake for 20 minutes until it is firm when you gently press. 

Step 8: To make the sauce using the Morphy Richards Milk Pan, heat the olive oil on a low heat, slowly and then add the garlic cloves and rosemary sprig. Add in the passata, salt and black pepper and simmer for 15 minutes. 

Step 9: For 10 minutes let the loaf cool down. Then, transfer onto a serving board or a plate. Cut into slices and serve with the sauce. 

If you are wanting to make it a vegan nut roast why not use an extra tablespoon of olive oil to replace the butter, eggs and the cheese. Bake it for 1 hour and the loaf will be soft in the center once it’s cooked.
