How To Make Banana Bread

Ingredients: 

  • 140g butter, softened

  • 140g caster sugar 

  • 2 large eggs, beaten 

  • 140g self-rasing flour 

  • 1 tsp baking powder 

  • 2 very ripe bananas, mashed 

  • 50g icing sugar 

  • Handful dried banana chips, for decoration 

Method:

Step 1: Start by heating the oven to 180C/160C fan/gas 4. Using the Morphy Richards 9x5” 2lb Loaf Tin, butter the tin and line the base and sides with baking parchment. 

Step 2: Using the Morphy Richards Stand Mixer, mix together the caster sugar and butter until the mixture is light and fluffy. Slowly add the 2 beaten eggs while adding in a small amount of the flour. 

Step 3: Stir in the remaining flour and baking powder, then add the 2 mashed bananas into the mixture. 

Step 4: Transfer the mixture into the tin using the Morphy Richards Solid Spoon, its red silicone edge allows you to easily scrape out every bit without waste. Bake for about 50 minutes or until golden brown and cooked through. Once you reach 30-40 minutes, check the loaf at 5 minute intervals using a skewer so your loaf doesn’t burn. 

Step 5: Once baked, let it cool down in the tin for 10 minutes. Once cooled, place the loaf onto a wire rack. 

Step 6: To make the icing mix together the icing sugar and 2 to 3 tsp of water to make a running consistency. 

Step 7: Once the loaf has fully cooled on the wire rack, take your runny icing and drizzle it over the top of the loaf, then take your banana chips to decorate and enjoy!
