Chicken & Bacon Pasta

Ingredients:
- 2 tbsp olive oil
- 1 tbsp butter
- 1 onion
- 1 large garlic clove
- 200ml double cream
- 100g mascarpone
- 75g parmesan
- 1 chicken stock cube
- 2 cooked chicken breasts (about 210g), shredded
- 8 rashers cooked streaky bacon (about 25g)
- 300g tagliatelle
- ¼ small bunch of parsley
- green salad, to serve
Method:
Step 1: Warm the oil and butter in a medium saucepan over a gentle heat. Add the onion and cook for about 10 minutes, until it’s softened and translucent. Stir in the garlic and cook for an additional 2 minutes.
Step 2: Next, blend in the cream, mascarpone, Parmesan, and crumbled stock cube. Stir everything together.
Step 3: Then add the cooked chicken and bacon, allowing them to heat through and soak up the delicious flavours.
Step 4: While the sauce is simmering, cook the pasta according to the package instructions. Reserve 100ml of the pasta water before draining. Toss the pasta in the creamy sauce, adding a splash of the reserved water to achieve your desired consistency.
Step 5: Season generously with black pepper, then garnish with fresh parsley. Serve alongside a crisp green salad for a delightful meal.
