Salmon with Vegetables

Cook a healthy Salmon with Vegetables in the Mico Microwave Round Grill, creating a quick, balanced meal with perfectly tender vegetables and succulent, evenly cooked salmon.

Serves: 1

Ingredients:

  • 1 Salmon fillet (approx. 130g)

  • ½ courgette, sliced

  • 1 small carrot, julienned

  • 4 asparagus tips

  • 1 tbsp of olive oil

  • Juice ½ lemon

  • Salt and pepper to taste

  • Lemon wedges to serve

Method: 

Step 1: Preheat the Mico Grill: Place the empty grill in the microwave and preheat for 1 minute at full power. 

Step 2: While preheating, season salmon and vegetables with olive oil, lemon juice, salt and pepper.

Step 3: Remove the preheated grill from the microwave using oven mitts. Arrange the salmon and vegetables evenly.

Step 4: Microwave at full power for 5–7 minutes (depending on the thickness of the salmon and how well done you like it the cooking time may need adjusting).

Step 5: Carefully remove, plate and serve hot. 

Step 6: Serve with white rice and lemon wedges.
