Mint & Lime Margarita Sorbet

Ingredients:

100ml tequila (silver or blanco works best)

60ml Cointreau or orange liqueur

150ml water

3 fresh limes, juiced

2 tbsp caster sugar or agave syrup (add more to taste)

A handful of fresh mint leaves

Zest of 1 lime

Optional: pinch of sea salt for balance
Method:
Step 1: Add the lime juice, water, tequila, Cointreau, sugar, mint leaves, and lime zest to a blender.
Step 2: Blend until smooth and the mint is finely broken down.
Step 3: Taste and adjust the sweetness or acidity if needed - it should be tangy with a hint of sweetness.
Step 4: Pour the mixture into the container and freeze overnight.
Step 5: Once frozen solid, spin on the Sorbet setting until smooth, light, and glossy.
Step 6: Serve immediately in chilled glasses with a sprig of mint and a lime twist.
