Chocolate Chip Pancakes

Make fluffy Chocolate Chip Pancakes in minutes with the Mico Microwave Round Grill. Soft, delicious, and packed with melted chocolate chips, they're perfect for a tasty breakfast or sweet treat.

Ingredients:

120g plain flour

1 tsp salt

1 tsp baking powder

1 tbsp sugar

230ml buttermilk
-
1 egg
-
3 tbsp butter, melted

50g chocolate chips
Method:
Step 1: Preheat the Mico Grill: Place the empty grill in the microwave and preheat for 1 minute at full power.
Step 2: While preheating combine the flour, salt, baking powder and sugar in a bowl then set aside.
Step 3: In a separate bowl whisk together the buttermilk, egg and melted butter. Add the dry ingredients to form a pancake batter. Lastly, fold in the chocolate chips.
Step 4: Remove the preheated grill from the microwave using oven mitts.
Step 5: Pour a thin layer of batter onto the grill.
Step 6: Microwave for 7–8 minutes. For best results, for more even cooking/browning turn the grill over halfway through (times may vary depending on the amount of batter added to the grill and your cooking preference).
Step 7: Remove, plate and serve hot.
Step 8: Repeat steps 5 & 6 until all the batter is used.
Step 9: Finish with a dollop of whipped cream and a sprinkle of chocolate chips, then enjoy!
Unused batter can be stored in an airtight container in the fridge for up to 24 hours.
