Spiced Honey Drizzle Cake

This delightful honey cake is an easy loaf cake recipe that is perfect for any baker. Rich with the natural sweetness of honey, this loaf cake is infused with warm spices that perfectly complement its moist, tender crumb.

Ingredients

  • 100g salted butter, plus extra for the tin
  • 100g light brown soft sugar
  • 100g runny honey
  • 1 large egg
  • 100ml milk
  • 1 tsp mixed spice
  • ½ tsp ground ginger
  • 150g self-raising flour
  • For the glaze
  • 25g salted butter
  • 25g runny honey

Method

Step 1: To begin, heat the oven to 180C/ 160C fan/ gas 4. Then butter and line a 900g loaf tin with baking parchment. 

Step 2: Using the Morphy Richards Total Control Hand Blender, beat the sugar and butter until creamy. Then whisk in the honey, egg, milk, spices and a pinch of salt until it becomes a loose batter. Then fold in the flour. 

Step 3: Pour the mixture into the prepared loaf tin and bake for 45 minutes. Using a skewer, pierce the middle of the cake and if the skewer comes out clean, the cake is cooked. 

Step 4: Once cooked, leave to cool for 10 minutes. Then transfer onto a wire rack and let it cool completely. 

Step 5: To make the glaze, melt the butter and honey in a small saucepan until smooth. Once melted, leave to cool until thickened then drizzle over the top of the cooled cake. Leave to set, then serve!
