Brioche French Toast

Preparation Time: 5 minutes 

Cooking Time: 15 minutes 

Serves: 4 people

Ingredients 

  • 2 large eggs
  • 80ml whole milk
  • 40ml double cream
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 4 thick slices brioche
  • 2 tbsp vegetable oil
  • 2 tbsp butter
  • To serve, icing sugar and fresh berries 

Method

Step 1: Whisk together the milk, cream, eggs, vanilla and cinnamon. Place the brioche slices on a shallow dish and pour the mixture over the top. Allow them to soak for 2-3 minutes, then carefully turn over and allow to soak for a couple more minutes. 

Step 2: Over a medium heat, warm up 1tbsp of vegetable oil and butter in a non-stick frying pan until it starts to foam. Carefully place 2 slices of the brioche into the frying pan and fry for 3 minutes on each side or until golden and crispy. Then, pop onto a wire cooling rack over a baking tray and keep warm in the oven while you repeat the process with the remaining slices of brioche. 

Step 3: Dust the icing sugar over the top of the french toast and top with fresh berries!
