Rum and Coke Tacos
If you're looking for a new twist on the classic taco, we present to you: rum and coke tacos. This unique recipe combines two unexpected flavours, resulting in a delicious and unforgettable dish.
Prep Time: 5 minutes
Cooking Time: 4-5 hours
Serves: 4 people
Ingredients
- 2 x beef short ribs
- 1 x large bottle of coca-cola
- A generous “glug” of spiced rum
- Your favourite spice seasoning/rub
- 1 x onion (sliced)
Method
- Season your short ribs with your seasoning/rub and add to the slow cooker along with your onion slices
- Pour a couple of double shots of rum into the slow cooker and then add Coca-Cola until the meat is covered
- Set the slow cooker to high and leave for several hours, until the meat falls off the bone
- When the meat is tender and falling off the bone, remove it and set it aside
- Take a few ladles of the cooking liquid and reduce it down in a saucepan until it’s thick and sticky
- Add the meat back to the reduced cooking liquid, serve, and enjoy!
