Air Fryer Fluffy Pancakes Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Cooking spray or a small amount of melted butter for greasing the air fryer basket

Optional Toppings:

  • Maple syrup

  • Fresh berries

  • Sliced bananas

  • Whipped cream

Instructions:

  1. Preheat the Air Fryer:

    • Preheat your air fryer to 350°F (180°C) for about 5 minutes.

  2. Prepare the Pancake Batter:

    • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  3. Mix Wet Ingredients:

    • In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  4. Combine Wet and Dry Ingredients:

    • Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay. Let the batter rest for a couple of minutes.
  5. Grease the Air Fryer Basket:

    • Lightly grease the air fryer basket with cooking spray or a small amount of melted butter to prevent sticking.
  6. Portion the Batter:

    • Using a ladle or measuring cup, pour a small amount of batter onto the air fryer basket to form individual pancakes. Leave enough space between each pancake to allow for expansion.
  7. Cook in Batches:

    • Depending on the size of your air fryer, you may need to cook the pancakes in batches. Cook for about 3-4 minutes on one side until the edges are set and bubbles form on the surface.
  8. Flip the Pancakes:

    • Carefully flip the pancakes using a spatula. Cook for an additional 2-3 minutes on the other side, or until they are golden brown and cooked through.
  9. Repeat:

    • Repeat the process with the remaining batter, regreasing the air fryer basket if necessary.
  10. Serve:

    • Once the pancakes are cooked, transfer them to a plate. Serve warm with your favourite toppings such as maple syrup, fresh berries, sliced bananas, or whipped cream.
