Slow Cooker Chicken Fajitas

Ingredients: 

  • 200g tinned chopped tomatoes 
  • 1 tbsp tomato puree 
  • 2 garlic cloves, finely chopped 
  • 3 mixed colour peppers, sliced into strips 
  • 1 red onion, sliced 
  • 28 g pack fajita seasoning mix 
  • 500g skinless boneless chicken breast fillets 

Method:

Step 1: Start by creating a flavourful base! Pour half of the chopped tomatoes into your slow cooker and stir in the tomato puree and garlic. Don't forget to season it! Layer half of the peppers and onion on top.

Step 2: Now it's time for the star of the show - the chicken! Place the chicken on top of the pepper layer. Sprinkle the fajita seasoning mix over the chicken breasts. Then, add the remaining chopped tomatoes, peppers, and onion. Set your slow cooker to low, put the lid on, and let it cook for 4-6 hours until the chicken is tender.

Step 3: Want to thicken the cooking liquid for an extra indulgent touch? Simply strain the liquid into a pan, bring it to a boil, and reduce it until it thickens. This step is optional but highly recommended. Once thickened, mix it back in with the chicken.
