Air Fryer Banana Bread

Ingredients:

  • 150ml sunflower or vegetable oil, plus extra for the tin 
  • 150g caster sugar
  • 150g self-raising flour
  • 1 tsp baking powder
  • 2 eggs
  • overripe banana
  • 50g pecans, chopped (optional) 
  • 50g chocolate chips (optional) 

Method:

Step 1: Prepare your loaf tin by greasing it with oil and lining it with baking parchment. Make sure it fits in your air fryer basket. If not, use a muffin tin or a suitable alternative.

Step 2: Preheat your air-fryer to 160C. In a bowl, combine oil, sugar, flour, baking powder, and eggs. Mash the bananas and mix them into the batter. Add half of the pecans and all of the chocolate chips. Pour the batter into the tin and sprinkle the remaining pecans on top.

Step 3: Bake for 45 minutes to 1 hour, or until a skewer inserted in the middle comes out clean. Check after 20 minutes to prevent browning. If needed, reduce heat to 140C or cover with foil to avoid burning. Once done, let it cool on a wire rack before serving. The loaf can be stored in an airtight container for up to three days. Enjoy!
