To celebrate Pancake Day properly, you need to perfect your batter – nothing beats homemade pancakes when you get the recipe right and whisk up your batter to perfection and using the Total Control Hand Mixer you’ll have a jug of perfect batter in no time. Whether you’ve got a sweet tooth or fancy sampling savoury pancakes this Shrove Tuesday, these recipes from the Morphy Richards Cook & Create app are easy to make and are sure to impress.
Fruity Traditional Pancakes
To make the pancake batter, place the flour and salt into a large mixing bowl, make a well in the middle, break in the egg and add a little of the milk. Fit the beaters onto the Total Control Hand Mixer and select speed 3. Mixing continuously, add the milk a bit at a time until a smooth batter is formed (this can take up to a minute). Once all the milk has been added continue to mix for another minute, then leave the mix to stand for half an hour.
Next, heat up a frying pan and add the oil. Pour some batter into the heated pan and create a thin even layer. Fry until gold brown then have fun flipping the pancake! (Try not to get any on the ceiling). Once you’ve made as many pancakes as you can with your jug of batter, top your tasty sweet pancakes with your favourite fruit – strawberries, bananas and blueberries work particularly well. For an even sweeter treat, try adding a drizzle of honey or chocolate spread to your pancakes.
For an alternative twist on the traditional Pancake Day recipe, try a savoury Cannelloni-inspired pancake packed with Italian herbs for lunch or dinner this Shrove Tuesday.
To make, start by finely chopping the onion and the ham and crushing the garlic cloves. Fry the onions and garlic until softened and add the tomatoes, water, herbs, sugar, salt and pepper. Stir the sauce and bring to boil. Then turn down heat to a simmer and let it cook for 20 min.
The next step is the filling. Pour some of the milk into a medium sized pan, add a little flour and softened butter and use the Total Control Hand Mixer to whisk up the filling. Heat up the pan and bring to boil. Allow it to cool down for 10 min. Next, stir the cream cheese, chopped ham and a beaten egg into the mixture. Season and refrigerate the filling.
Don’t forget the pancake batter! For the exciting part of this recipe simply place the flour, salt, egg and the rest of the milk into a bowl and use the Total Control Hand Mixer again to whisk up the batter until smooth. Let it stand for couple of minutes. Heat up a pan and fry some pancakes.
Finally, put it all together – spread each pancake with the filling and roll up fairly tightly. Preheat the oven to 180%/Gas Mark 5. Use an ovenproof dish and pour half of the tomato sauce into that dish and add the pancakes into the sauce. Cover the pancakes with thinly sliced mozzarella, pour over the remaining tomato sauce and add some grated parmesan on top. Bake for 20 - 30min.
