Spiced Squash and Tomato Soup – Soup Maker Recipe

Today, we’re bringing you the last in the series of our worldwide soup maker recipes that Christian Aid has kindly provided to ‘Home of the House Proud’ to celebrate their ‘Super Soup Lunch’ events that are due to take place up and down the country this Friday (25th March). Today’s recipe is from India, just one of the many countries that Christian Aid Supports. The recipe is for a delightful Spiced Squash and Tomato Soup. Why not try it and let us know what you think?

Spiced Squash and Tomato Soup

Recipe serves 4

Ingredients

6x Large tomatoes

1xLarge onion, finely diced

1x Clove of garlic, finely chopped

1x Small pumpkin or other seasonal squash, peeled and cubed

1 ½ Pints of water

1x Teaspoon of ground cumin

1x Teaspoon of ground cinnamon

1x Teaspoon of salt

Red chillies, as many or few as you want, depending on how hot you like your soup

Coriander

Method

  • Boil tomatoes for five minutes and leave to cool
  • Heat oil in saucepan; add onions, garlic and chillies and cook until they become aromatic
  • Peel the skin of the cooled tomatoes. Be careful as they can burn once boiled. Add the tomatoes to the onions, garlic and chillies
  • Add the water and the diced squash and leave to boil for 20 minutes or until the squash is soft
  • Take off the heat and allow to cool a little. Then using a hand blender, blend the ingredients until the consistency is smooth
  • Place back on a medium heat and add the cinnamon, cumin and salt, stir and leave to simmer for 15 minutes. Serve in a bowl and garnish with fresh coriander
