Ethiopian Vegetable Stew (Alecha Wat) – Soup Maker Recipe

With little under two weeks until Christian Aid’s ‘Super Soup Lunches’ take place across the country to raise money for some of the less fortunate people around the world, today we’re going to tickle the taste buds of visitors to ‘Home of the House Proud’ with a delicious Ethiopian Vegetable Stew Recipe or as it’s known in Ethiopia, Alecha Wat. Ethiopia is just one of the many countries that money raised by Christian Aid goes to.

Ethiopian Vegetable Stew

Recipe serves 8


1x Onion

4x Carrots

4x Medium-sized potatoes

1x Green Cabbage

1x Can of tinned tomatoes

2x Fresh Tomatoes

4x Green peppers

2x Teaspoons of salt

1x Teaspoon of ground ginger

3x Cups of water

4x Tablespoons of vegetable oil


  • In a large saucepan, sauté the chopped onion in the oil until soft, but not brown
  • Add the carrots, peeled and cut into one-inch slices; the green peppers, cleaned and cut into quarters; three cups of water; the tinned tomatoes; the salt; and half the ground ginger
  • Cover with a lid and cook for 10 minutes
  • Add the potatoes cut in thick slices
  • Plunge the fresh tomatoes in boiling water, leave to cool and then remove the skins. Cut into eight wedges each and add to mixture
  • Cut the cabbage into one-inch wide wedges and add to mixture
  • Cook until vegetables are tender
  • Season to taste and serve
